  • 1 lb (450g) beef chunks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro
Instructions
  1. In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks.
  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the diced tomatoes, kidney beans, beef broth, tomato paste, chili powder, cumin, paprika, salt, and pepper.
  4. Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.
  5. Taste and adjust the seasoning as needed. If you prefer a thicker chili, you can let it simmer uncovered for a bit longer to allow the liquid to reduce.
