Shrimp gumbo is one of those dishes that sings to the soul. It is comfort food of the highest degree that is simply unbeatable on a cold winter’s night. This version has the heat turned up a bit more than a normal Gumbo but we’re sure you will love the flavour that the addition of Chilli provides. Enjoy!
Ingredients
  • Vegetable oil – ¾ Cup
  • Chilli infused oil – 2 tablespoons
  • All-purpose flour – 1 cup
  • White onion - 2 medium – chopped
  • Kashmiri Chillies – 6 dried * (see note)
  • Green bell pepper- 1 deseeded and chopped
  • Celery – stalk, chopped
  • Garlic - 4 cloves, sliced
  • Chicken stock – 2 cups
  • Tabasco sauce ® - 1 tablespoon
  • Sliced chorizo – 6 ounces ** (see note)
  • Prawns /Shrimp – peeled -15 ounces
  • Whole tomatoes – 1 can
  • Okra - fresh or frozen – 5 ounces
  • Bay leaves – 4
  • Dried Oregano- ½ teaspoon
  • Gumbo Filé powder – 2 teaspoons *** (see note)
  • Dried chilli flakes or cayenne powder – I tablespoon
  • Salt to taste
  • Spring onions/ scallions – 2 thinly sliced
Instructions
  1. Heat the chilli infused oil
  2. Add onions and chorizo and fry on medium heat until onions start to change colour (2 – 3minutes)
  3. Add garlic, Kashmiri Chillies, Bell Peppers and celery. Cook for 5 minutes over low to medium heat. Remove from stove
For the roux:
  1. Heat vegetable oil until smoking hot. Add flour and whisk until well mixed. Using a wooden spoon continue stirring until the roux turns a peanut butter colour. (15 – 20 minutes). Needs to be stirred continuously to prevent burning. Add chicken stock and continue stirring until thickened
Combining everything:
  1. Add the prepared mix (onions, chorizo, garlic, etc.) above and all the remaining ingredients with the exception of the spring onions
  2. Cook for a further 10 minutes on low to medium heat until the prawns and chorizo are cooked through
Final step:
  1. Stir in spring onions and serve immediately with white rice
Notes
Kashmiri Chillies can be substituted with 1 tablespoon dried Paprika
Filé powder (ground sassafras leaves) can be bought from Amazon®
In the USA Andouille or Italian sausage is used
