A basic recipe
Making hot sauce at home is a great way to customise the heat and flavour to your own preferences. Here's a simple recipe to get you started:
Ingredients:
- 1 pound fresh Chillies (such as JalapeƱo, Scotch Bonnet, or Thai Chillies)
- 3 garlic cloves, minced
- 1/2 cup white vinegar
- 1/2 cup water
- 1 tablespoon salt
- 1 tablespoon sugar
Instructions:
- Wash and dry the Chillies, then remove the stems.
- If you prefer a milder sauce, remove the seeds and membranes from the Chillies. For a hotter sauce, leave them in.
- In a blender or food processor, combine the peppers, garlic, vinegar, water, salt, and sugar.
- Blend until the mixture is smooth.
- Pour the mixture into a saucepan and bring it to a simmer over medium heat.
- Reduce the heat and let the sauce simmer for 10-15 minutes, stirring occasionally.
- Remove the sauce from the heat and let it cool to room temperature.
- Transfer the sauce to a clean jar or bottle and store it in the refrigerator.
