Meet the meat
Be it lamb, beef, pork or goat; there are literally thousands of spicy meat recipes worldwide. From Jamaica, with curried goat, Korea with Bulgogi, to Albondigas (meat balls) from Spain, to name but a few, people around the globe love their meat. As with any ingredient that millions of people have eaten for thousands of years, every conceivable way of preparing spicy meat dishes has probably been thought of. Dried biltong from South Africa, spicy sausages from India, beef tartare from France, goulashes from Hungary are just simply the tip of the iceberg (or should I say fire poker) when it comes to how meat is used with chillies.

Meatloaf is one of those comfort foods that meet the grade every time. This recipe for spicy meatloaf not only meets the cut; it is top of its class. It is easy to make but delivers on succulence and flavour as well. Let’s make spicy meatloaf
You will need the following ingredients:
- Minced beef – 750 grams
- Pork sausage meat - 275 grams
- Onions -one medium ( finely chopped )
- Fresh bread crumbs - 125 grams
- Mozzarella cheese (grated) – half a cup
- Eggs -one large ( beaten)
- Garlic – one clove = minced
- Red chillies – two (chopped)
- Coriander seeds – one teaspoon (coarsely ground)
- Chilli powder – ½ tablespoon
- Tomato puree – one tablespoon
- Beef stock – 100 ml
1)Preheat the oven to 180 degrees Celsius
2)Mix all the ingredients except the cheese. Using your hands is best to do this
3)Flatten into a rectangle. Sprinkle the cheese on one side near the end. Roll up Swiss roll style, with the cheese ending in the middle
4)Place into a well-greased baking dish. Cover with oiled parchment paper.
6)Place in the oven for an hour, then remove the parchment paper.
7Bake uncovered for a further 30 minutes
8)Serve
This recipe will serve four to five portions. It is excellent with mashed potatoes and with a healthy dash of Sriracha Chilli sauce
