Ingredients
For the Shrimp:
  • 1 pound large shrimp, peeled and deveined
  • 2 cups all-purpose flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
For the Guacamole Sauce:
  • 2 ripe avocados
  • 1 lime, juiced
  • ½ red onion, finely diced
  • 1 tomato, seeded and diced
  • 1 jalapeño, seeded and minced
  • ⅓ cup fresh cilantro, chopped

Instructions
Prepare the Guacamole Sauce:
  1. Mash the avocados in a bowl
  2. Mix in lime juice, diced onion, tomato, jalapeño, and cilantro
  3. Season with garlic powder, salt, and pepper
  4. Cover and refrigerate
Prepare the Shrimp:
  1. Set up three shallow bowls:
  2. First bowl: flour seasoned with salt and pepper
  3. Second bowl: beaten eggs
  4. Third bowl: panko mixed with garlic powder and paprika
  5. Pat shrimp dry with paper towels
  6. Dredge each shrimp in flour, then egg, then panko mixture
Frying:
  1. Heat oil in a deep pan to 350°F (175°C)
  2. Fry shrimp in batches for 2-3 minutes until golden brown
  3. Drain on paper towels
  4. Season with salt while hot
  5. Serve immediately with the chilled guacamole sauce. Garnish with lime wedges and extra cilantro if desired.
Notes

Ingredients
  • Lemon-peri peri sauce - one teaspoon
  • Three large potatoes ( approximately 350 grams)
  • Paprika - one gram
  • Salt - half a teaspoon
  • Pepper - one gram
  • Cheese - 50 grams
  • Pickled Jalapeños - 20 grams
  • Red chilli - 8 grams
  • Chive - sprinkling
  • 4 rashers Bacon ( approximately 80 grams)
  • Sour cream - two tablespoons
Instructions
  1. Chop your potatoes up into fries,spray with oil and season with your favourite seasonings.
  2. Airfry for 20-25 mins shaking every 7-10 mins.
  3. Ffry the bacon until crispy and cut into bite size pieces.
  4. Chop your chilli into fine pieces.
  5. Time to load up
  6. Fries in the bottom
  7. Followed by cheese and your chosen toppings.
  8. Place in a heated oven for 5 minutes until crispy.
  9. Top with sour cream
