500g chicken breast, sliced
2 bell peppers, sliced
1 large onion, sliced
2 tbsp vegetable oil
8 flour tortillas
For the spicy fajita mix:
2 tsp chilli powder
1 tsp ground cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried oregano
¼ tsp cayenne pepper
½ tsp salt
¼ tsp black pepper
Instructions
Combine all spices for the fajita mix in a small bowl. Mix well.
In a large bowl, toss the sliced chicken with ⅔ of the spice mix until evenly coated.
Heat 1 tbsp oil in a large frying pan over high heat. Add the chicken and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove from the pan and set aside.
In the same pan, add the remaining oil, bell peppers, and onions. Sprinkle with the remaining spice mix. Cook for 4-5 minutes until vegetables are tender-crisp.
Return the chicken to the pan and stir to combine with the vegetables. Cook for an additional 2 minutes to reheat the chicken.
Warm the tortillas according to package instructions.
Serve the sizzling chicken and vegetable mixture with warm tortillas.
