Ingredients
1 lb (450 g) ground beef
1 large onion, diced
2 cloves garlic, minced

1 can (15 oz/400 g) kidney beans, rinsed and drained
1 can (28 oz/800 g) crushed tomatoes
2 tbsp tomato paste
1 cup (240 ml) beef broth
2 tsp cumin
2 tbsp chili powder
1 tsp oregano
1 tsp paprika
Salt and pepper to taste
2 bay leaves
Instructions
Prepare the Ingredients: Dice the onions, mince the garlic, and chop the bell peppers.
Cook the Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain the excess fat.
Add Vegetables: Add the onions, garlic, and bell peppers to the pot and cook until they are tender.
Seasoning: Stir in the cumin, chili powder, oregano, paprika, salt, and pepper. Cook for another minute to release the flavours.
Combine: Add the crushed tomatoes, tomato paste, and beef broth. Mix well.
Beans: Rinse and drain the kidney beans before adding them to the pot.
Simmer: Add the bay leaves, bring the mixture to a boil, then reduce the heat and let it simmer for at least an hour. The longer it simmers, the deeper the flavours will be.
Adjust Seasoning: Taste and adjust seasoning if necessary before serving.
